pesquisadores do Departamento de Tecnologia e Inspeção de Produtos de Origem
Animal, da UFMG – Universidade Federal de Minas Gerais, vêm realizando pesquisa
em parceria com a UFSJ – Universidade Federal de São João del-Rei e apoio da
EMATER, para identificação de bactérias presentes no queijo e sua influência no
processo de maturação. Além disso, em outra linha de pesquisa, buscam ainda
identificar o potencial de melhoria do queijo da Região das Vertentes. Estamos
envaidecidos pela escolha do Catauá para a pesquisa e acreditamos que muitas
